    Air at -30 to -45°C pulls product from +5°C through the freezing curve. Cold air matters, but airflow across every product surface matters just as much. A cold room with blocked airflow still freezes slowly.

A blast that clears product faster than the packing line can feed it leaves expensive capacity waiting. One that falls behind becomes the bottleneck and pushes product into staging.

What temperature does a blast freezer run at?

The air normally runs at -30 to -45°C and moves hard across the product. Speed matters because fast freezing forms small ice crystals. Slow freezing forms large crystals that damage cell walls, which shows up later as drip loss, weak texture, and lower yield. Colder air alone doesn't guarantee a fast cycle. Packaging, product thickness, spacing, and the loading pattern can still block airflow, so we calculate and test the complete batch.

How much product can a blast freezer freeze per batch?

Room size is only one part of the answer. Product thickness, entering temperature, packaging, loading pattern, and airflow decide how quickly the center freezes. Example rooms handle 15–30 tons per batch with a full freeze in under 6 hours, but that's not a promise for every product. Do I need both a blast freezer and a storage freezer?

Usually, yes. The blast freezer uses heavy refrigeration and airflow to pull warm product down fast. The walk-in freezer holds already-frozen product with far less running capacity. Using the blast for storage wastes power and ties up production equipment. Asking a storage freezer to blast product gives you a slow, uneven freeze. We size the blast to the packing line and the storage room to the inventory you need to hold.

What is a containerized blast freezer?

A complete blast-freezing system built into a container footprint: insulated envelope, evaporators, condensing unit, and controls. It arrives ready for site connections and can move later. It works when the building isn't ready, permanent construction will take too long, or the operation needs temporary capacity. The trade-off is footprint and loading flexibility; a permanent room gives you more freedom once the long-term product flow is settled.
